Rationale:

This course is designed to impart theoretical and applied knowledge on analytical, physical and organic chemistry in the field of food science.

 

Course Learning Outcomes (CLO):

  1. Describe chemical equilibrium, solubility products, properties of solution and colloids.
  2. Prepare pH, buffer and standard solutions.
  3. Perform volumetric methods for chemical analysis.
  4. State working principles of major analytical instruments and select suitable techniques for chemical analyses.
  5. Explain chemical bond formation, reaction mechanisms and stereochemistry of organic compounds.
  6. Describe aromatic, heterocyclic, carbohydrate, organometallic, polynuclear, carboxylic acid and their derivative compounds.

Analytical and Physical Chemistry:

Electrochemistry: Electrolytes and non-electrolytes, strong and weak electrolytes, electrolytic dissociation and conductance; ionic equilibrium, Ostwald’s dilution law, solubility of electrolyte and non-electrolyte; solubility product; principles of precipitation; common ion effect. pH of a solution, buffer solution and its preparation.

Properties of solution: Properties of solution: colligative properties; vapor pressure; elevation of boiling point; depression of freezing point; Osmotic pressure and osmosis; Raoult’s law.

Colloids: Types, properties and preparation of colloids. Application of colloids in food and feed.

Analytical chemistry: Types of substances; units of concentrations; preparation and properties of standard solution; types of reactions in volumetric analysis, acid-base and redox titrations; indicators - selection and theories.

Instrumental methods of analysis: Principle, instrumentation and application of colorimetry and spectrophotometry, flame emission and atomic absorption spectrophotometry, mass spectrometry and chromatography.

Organic Chemistry:

Chemical bonding: Bonding in organic compounds; polarityof molecules; formation and cleavage of covalent bonds.

Reaction mechanism: Electrophilic and nucleophilic, Aldol and Parkin condensation; iodoform and Cannizzaro reactions with their mechanisms.

Stereochemistry: Configuration and confirmation, cause of optical activity; mesocompound, enantiometers and specific rotation.

Chemistry of organic compounds: Sources, properties, chemical nature, reactions and applications of aromatic, heterocyclic, carbohydrate, organometallic, polynuclear, carboxylic acid and their derivative compounds.
